- 12 ounces bittersweet chocolate,
chopped
- 2/3 cup / 150g unsalted butter
- 3 large eggs
- 1 1/2 cups / 285g firmly packed
dark brown sugar

- Preheat the oven to 350F with a
rack positioned in the middle. Grease an 8x8-inch baking dish or an
equivalent size.
- In a small cup, combine the
vanilla extract and ground cardamom. Set aside.
- In another small bowl, mix
together the flour, espresso powder, and salt. Set aside.
- Create a double-boiler by
placing a stainless steel mixing bowl over a pot of simmering water. Melt
the butter in the mixing bowl, then turn off the heat and stir in the
chopped chocolate until smooth. Be cautious not to allow any water or
steam to come into contact with the chocolate.
- In a large mixing bowl, whisk
together the eggs, dark brown sugar, and the cardamom extract mixture
vigorously until the sugar dissolves and the mixture becomes light and
voluminous.
